National Microwave Day

It’s National Microwave Day! Do you cook in your microwave or is it only used for reheating leftovers, warming coffee or making popcorn? Since Christmas is coming, I’m going to share two of my favorite microwave recipes. Pictures coming soon!

Note: Microwaves vary in power levels. These recipes are geared for a full-sized, full-power microwave (1200-1400 watts). If yours is compact and low-powered, you will have to cook these longer.

Microwave Fudge

1 lb. powdered sugar
1/2 c cocoa
1/2 c butter
1/4 c milk
1 tsp vanilla

Microwave butter 1 minute. Stir in sugar, cocoa, and milk. Cover with waxed paper and microwave 2-3 minutes on High. Stir in vanilla. Pour into a 9X9 pan lined with foil and buttered. Let cool and cut into small pieces. Store in an airtight container.

Microwave Peanut Brittle

1 cup sugar
1/2 cup corn syrup
1 cup raw peanuts
1/8 tsp salt
1 Tbsp butter
1 tsp vanilla
1 tsp baking soda

Mix sugar, corn syrup, peanuts and salt in a microwave safe bowl. Cook 4 minutes on high. Stir. Cook 4 minutes longer. Stir in butter and vanilla. Stir. Cook 1-2 minutes. Add baking soda. Stir thoroughly. Spread on buttered cookie sheet. Cool and break into small pieces.
