Welcome to Day 8 of my Christmas Cookie Countdown. I’ll be posting a different Christmas Cookie recipe every day from now until Christmas. If you miss any days, just look for the posts labeled Christmas Cookie Countdown. Today’s cookie is Chocolate Crinkles. It’s also National Brownie Day today and these cookies are chewy on the inside and crispy on the outside and rich like a good chocolate brownie. These are striking on the cookie tray with their dark brown interior and cracks and white powdered sugar exterior.
2 cups + 2 Tbsp flour
2 tsp baking powder
1/4 tsp salt
1/2 cup butter, at room temperature
1 3/4 cup sugar
1 tsp vanilla
4 oz unsweetened chocolate, melted
1/2 cup powdered sugar
Combine first 3; set aside. In a large bowl, beat butter and sugar until fluffy. Beat in eggs, then vanilla and chocolate. Gradually add flour mixture, mixing just until blended. Chill dough 1 hour. Heat oven to 350. Lightly grease cookie sheets. Shape dough into 1 1/4” balls and roll in powdered sugar. Place 1 1/2” apart on cookie sheets. Bake 12 minutes. Tops should be puffed and crackled. Remove to rack. Store tightly covered with waxed paper between layers.
