Christmas Cookie Countdown, Day 6

Welcome to Day 6 of my Christmas Cookie Countdown. I’ll be posting a different Christmas Cookie recipe every day from now until Christmas. If you miss any days, just look for the posts labeled Christmas Cookie Countdown. Today’s cookie is Pecan Pie Bars. It’s all the crunchy, gooey goodness of pecan pie, in a cookie.

Pecan Pie Bars

2 cups flour
1/2 cup sugar
1/8 tsp salt
1/4 cup butter, cut up
1 cup brown sugar
1 cup light corn syrup
1/2 cup butter
4 large eggs, lightly beaten
2 1/2 cups chopped pecans
1 tsp vanilla

Combine flour, sugar, and salt in large bowl; cut in 1/4 cup butter thoroughly with a pastry blender until mixture resembles very fine crumbs. Press mixture evenly into a greased 13X9 pan, pressing mixture firmly in pan. Bake at 350 for 17-20 minutes or until lightly browned.

Combine brown sugar, corn syrup, and 1/2 cup butter in a saucepan; bring to boil over medium heat stirring gently. Remove from heat. Stir 1/4 of hot mixture into beaten eggs; add to remaining hot mixture. Stir in pecans and vanilla. Pour filling over crust. Bake at 350 for 34-35 minutes or until set. Cool completely in pan on a wire rack. Cut into bars.
