Christmas Cookie Countdown, Day 4

Welcome to Day 4 of my Christmas Cookie Countdown. I’ll be posting a different Christmas Cookie recipe every day from now until Christmas. If you miss any days, just look for the posts labeled Christmas Cookie Countdown. Today’s cookie is Scandinavian Almond Bars. These are beautiful almond scented strips covered in sliced almonds. You can leave them plain or drizzle them with icing.

Scandinavian Almond Bars

1 3/4 cups flour
2 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 cup sugar
1 egg
1/2 tsp almond extract
milk
1/2 cup sliced almonds, coarsely chopped

Stir together flour, baking powder, and salt. Beat butter till softened. Add sugar and beat until fluffy. Add egg and almond extract and beat well. Add flour mixture and beat well. Divide into 1/4’s. Form each portion into 12” roll. Place 2 rolls 4-5” apart on ungreased cookie sheet. Flatten each roll until 3” wide. Repeat with remaining rolls. Brush each flattened roll with a little milk and sprinkle with 2 Tbsp of the chopped almonds. Bake at 325 for 12-14 minutes or till edges are lightly browned. While still warm, cut crosswise on the diagonal into 1” strips. Cool completely on wire rack.
